Camping Breakfast Doughnuts - OMG Soooo Good!

Last summer we were invited up to a friends cabin up in International Falls, MN. Their cabin is on an island in the middle of Rainy Lake. If you looked to the right it was the United States, if you look to the left it is Canada. Seriously the most beautiful place I have ever been to.

It was an adults only weekend (amazing in itself) and most of the friends who came with were campers. So we brought our favorite camping recipes to share with each other. This is the first time I learned about Breakfast Doughnuts. And now thanks to our lovely friends, we make doughnuts on the morning of the day we pack up to go home every trip. It is a quick and easy recipe that you don't need to write down to remember, the best kind of camping recipe!

Breakfast Doughnuts

Ingredients:

Pillsbury Biscuits
Oil
Sugar
Pot for boiling oil
Large Ziploc bag for sugar
Metal Slotted Spoon
Three plates

Cup of Coffee (optional)

Directions:

Fill your pot about 1/4 full with oil on your stove top, getting the oil hot but not too hot. I don't know the temperature and we eye ball it. Keep the flame low, and the oil just swirling a little. You do not want the oil too hot or they will not cook evenly. For now, put the oil on low and start preparing the biscuits. 

Open the biscuits and separate them. You will take each biscuit and, using your thumbs, make a hole in the middle, pulling it apart slightly to make a rough doughnut shape. Place them onto the first plate. When it is just our family of five, we use two tubes of biscuits. Last weekend we had eight people camping with us, so we used four cans! And only two little doughnuts were left at the end, and we ate biscuits and gravy too. So I would suggest at least two cans per five people.

When you have the doughnuts formed, take the tiniest pinch of dough off of one of them to drop into the oil to see if the oil is ready. It should float to the top of the oil and bubble a little around the edge, starting to turn brown. If it instantly turns brown, your oil is too hot and you will need to wait for it to cool naturally down before beginning. If it doesn't do anything but sit there, your oil is not hot enough yet. I know these are hard directions, but you will get the hang of it.

Once the oil if hot, and you have checked it, you can start frying your doughnuts. This is easier with two people. Put 4-5 doughnuts into the pot, depending on how large of a pot you have. They will expand, so give them room! While you are doing that, have your helper pour a good amount of plain old sugar into a gallon baggie. You can also use powered sugar, but our kids didn't like those, so we stick to plain sugar now.

Once you see the edges of the dough turning a nice golden brown, use your slotted spoon to flip them over in the oil. When that side is also brown, they are done. Scoop them out with the slotted spoon and place them on the second plate. Keep scooping them out. Once slightly cooled, the helper will grab them, one at a time, and place them into the baggie with sugar and shake to cover them. They need to still be warm for the sugar to stick, but not so hot that they are burning their fingers grabbing them. Sugar all of them and place them on the third plate.

Keep frying the doughnuts and sugaring them. Be warned that some will disappear off the final plate before they make it to the table. Hubby likes to eat the first one to "test it". The kids like to joke about them being "One Biters" meaning they shove the entire doughnut in their mouths at one time. They have become a great tradition with our family, and I have a feeling the kids will pass this one down to their kids someday too.




We have used generic biscuits and they have not turned out very good. We have also used the generic biscuits from Aldi, and those were good. So test out different brands to find your favorite. I am thinking cinnamon and sugar would be good too...ummm. Now I want to make them again to try different things.

Hints: Keep a large bottle of oil in the camper to make this every trip. Pour sugar into the large baggie at home so you are ready, and you don't need to pack the whole container of sugar.
